Canarian gastronomy: simple, tasty and rooted in the terroir

The traditional cuisine of the Canaries reflects the island character of the archipelago: local products, little processed, often cooked in coals or boiled, for authentic and generous flavors.

Among the key ingredients are potatoes ("papas"), Atlantic fish, gofio, local vegetables and fruits (sweet potatoes, pumpkin, avocado, banana, citrus...), legumes (dried beans, chickpeas, lentils), goat cheeses and aromatic herbs.

Among the emblematic dishes :

Ropa vieja (chickpea stew and shredded meat)

Gofio escaldado (hot mash made from gofio, the flour of Canarian roasted cereals)

Vieja (a typical fish) prepared in the oven or as a stew
